Chocolate Chip Cookies with a Mystery Ingredient

Today I am letting you in on a little secret. I’ve been making these cookies for years and every time people ask how they turn out so fluffy and what the secret is. Usually I put them off and I haven’t ever shared this recipe with anyone. Seriously, I’ve been letting everyone think I am a baking goddess. But here it is, this recipe only has one simple ingredient swap and it will shock and amaze you.

Ok, so this recipe starts out just like any other Chocolate Chip Cookie. Flour, baking soda, salt, vanilla, brown sugar, eggs, butter and then drum roll please… Vanilla Instant Pudding, in lieu of the granulated sugar you just sub that mystery ingredient right in. And Voila! Fluffy, gorgeous, delicious cookies.

Extra Fluffy Chocolate Chip Cookies

Makes 2 Dozen

Ingredients

2 1/4 cups all purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla extract

2 sticks/1 cup butter (softened)

3/4 cup brown sugar (packed)

2 large eggs

About 2 cups of semi sweet chocolate chips (I dump the whole bag in)

Course salt for sprinkling.

1 box Instant Vanilla Pudding ( I use the bigger box)

Instructions

Preheat your oven to 375°. Whisk together flour, baking soda and salt in a small bowl. In a large bowl or mixer beat butter, brown sugar and vanilla, and mix in vanilla pudding mix. Add eggs in one at a time and then slowly add in flour mix. Lastly hand mix in your chocolate chips. I like to place my cookies onto a baking sheet lined with parchment but it isn’t necessary. I use and ice cream scoop to make bigger cookies, and it makes about 2 dozen. I bake the large cookies at 375° for about 10 minutes and then reduce to 350 for about 5 more minutes. If you make smaller cookies using a tablespoon you will bake for 10-11 minutes total at 375°. Let these cookies sit to cool for about 5-10 minutes and they will firm up. They will be golden brown on the top and bottom, but might seem undercooked, they aren’t they just need to cool and set.
